Sweet potatoes  take 95 to 130 days to mature, depending on variety. In Ontario, 'Beauregard' and 'Covington' are currently the most commonly grown varieties.

Sweet potatoes will grow in poor soil, but deformed roots may develop in heavy clay or long and stringy, sandy dirt. To create the perfect environment, create long, wide, 10-inch-high ridges spaced 3½ feet apart. They will grow in full sun to part shade and even tolerate very shady areas quite well.
