Garden Recipes
- INGREDIENTS: 8 cups grated zucchini(4-6), 8 eggs, 1 cup oil, 1/2 tsp pepper(optional),2 small/1 large onion,2 boxes potato pancake mix (ex.Streits)
- DIRECTIONS: Stir all the ingredients together well, as it is quite thick. Bake for 1 hour at 350 degrees in a pyrex dish.
Zucchini Loaf
Mediterranean Bean Salad
- INGREDIENTS: 425 gram white navy beans(canned),vegetables(1 medium tomato, 1 medium pepper, 1 onion diced, 1/4 cup parsley chopped), 1 cup spinach), 2 Tbsp olive oil, 2 Tbsp balsamic vinegar, sea salt & black pepper.

DIRECTIONS: Combine beans, tomato, pepper, onion & parsley Add oil and vinegar and season with salt & pepper to taste.
Put spinach in bowls & top with bean mixture.
- INGREDIENTS: 2 Tbsp margarine, 2 potatoes diced,2 zucchini unpeeled and sliced, 1 onion diced,3 cups chicken broth (1 Tbsp chicken soup mix, 3 cups water).

DIRECTIONS: In a large pot saute potatoes, zucchini & onion in margarine. Stir in broth and add salt and pepper. Bring to boil. Reduce heat, cover & simmer for 30 minutes. Pour broth into blender and process until smooth,
Potato zucchini Soup

INGREDIENTS: 3 TBSP( iodine free salt, pickling salt or kosher salt). 1 Quart water (spring, filtered or distilled).
1 Cup of vegetables of your choice(beans, cucumber, cauliflower)
1 Bay Leaf, 1/4tsp peppercorns, 1 or 2 grape leaves to keep vegetables crisp -
DIRECTIONS: Stir water and salt until dissolved,(you can heat the water first to make the salt dissolve easier)
Place vegetables in a mason jar and add water/salt mix (leave 1 inch of headspace at the top of jar. Note vegetables should be completely submerged.
Cover jar TIGHTLY and let stand at room temperature
Once a day open jar to release gas until veggies are to your liking.
& then refrigerate.
NOTE: If scum forms on top skim it off.
